Iced Easter Egg Biscuits

A fun, no-bake Easter treat that’s perfect for getting kids involved in the kitchen!

Ingredients

  • 1 packet Arnott’s Arrowroot biscuits
  • 1 ½ cups icing mixture, sifted
  • 125g unsalted butter, softened
  • 1 teaspoon milk or cream
  • ½ teaspoon vanilla extract
  • ¼ teaspoon rosewater essence (optional)
  • Food colouring of choice
  • M&M’s (or other small lollies) for decorating

Instructions

Electric Beaters/Stand Mixer Method
  1. Sift the icing sugar into a bowl. Add the butter and beat on high speed for 3-5 minutes until thick and pale.
  2. Add the milk, vanilla, and rosewater essence (if using). Beat for 1-2 minutes until smooth.
  3. If making one colour, add food colouring now and mix to combine.
  4. If making multiple colours, divide the icing into smaller bowls and mix in food colouring one drop at a time.
Stick Blender Method
  1. Place the sifted icing mixture into the bowl of a stick blender. Blitz until lump-free.
  2. Add the butter and blitz until combined, scraping down the sides as needed.
  3. Add the milk, vanilla, and rosewater essence (if using). Blitz until thick and glossy.
  4. If making one colour, add food colouring now and blitz to combine.
  5. If making multiple colours, divide the icing into smaller bowls and mix in food colouring one drop at a time.
