Ingredients

Easter Kit Kat Cake
  • 2 x boxes Greens Traditional Golden Butter Cake mix
  • 1 teaspoon vanilla paste
Decorations
  • 4 x 160g packets of Kit Kats
  • 3-4 x 120g packets of Speckled Easter Eggs
  • A ribbon (to tie around the cake)
Chocolate Icing
  • 5-6 cups icing sugar mixture, sifted
  • 125g unsalted butter, softened
  • ⅓ cup cocoa powder, sifted
  • ¼ cup cream or milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the cakes according to the box instructions, adding the vanilla paste for extra flavour. Once baked, allow them to cool completely in the tins before decorating.
  2. Using a sharp knife, gently separate the Kit Kat fingers for clean, neat edges.
  3. In a mixing bowl, sift together the icing sugar and cocoa powder. Add the softened butter, cream (or milk), and vanilla. Using an electric mixer, beat on low until combined, then increase to high speed and mix for 3-5 minutes until thick, smooth, and creamy.
  4. Place one cake layer on a serving plate or cake stand.
  5. Spread a generous layer of icing on top, making sure it’s thick enough to hold the second cake layer in place.
  6. Add the second cake layer and continue to ice the top and sides of the cake, ensuring the icing is thick enough for the Kit Kats and speckled eggs to stick.
  7. Gently press the Kit Kat fingers around the edge of the cake, leaving a slight gap between each piece if desired.
  8. Scatter the speckled Easter eggs over the top, filling any gaps to create a full, festive look.
  9. Tie a ribbon around the cake and finish with a bow for an extra special touch.

Notes

Ensure the cakes are completely cooled before icing.
