Ingredients

  • 200-250ml milk
  • 1 teaspoon vinegar
  • 1 cup plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon Bicarbonate of Soda
  • Pinch salt
  • 2 tablespoons caster sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 30g unsalted butter, melted
  • 250-300g leftover plum pudding, crumbled

Instructions

  1. In a small jug, mix the milk and vinegar, whisk lightly, and set aside to curdle slightly.
  2. In a large mixing bowl, sift together the flour, baking powder, and bicarbonate of soda. Stir in the salt, caster sugar, and crumbled plum pudding.
  3. Add the egg and vanilla to the milk mixture and whisk until combined.
  4. Pour the wet ingredients into the dry ingredients, add the melted butter, and gently fold to combine. Be careful not to over-mix; stir just until there’s no visible dry flour. Let the batter rest for 10 minutes.
  5. Heat a frying pan over medium heat and lightly grease with butter.
  6. Spoon the batter onto the pan, cooking for 2-3 minutes or until bubbles form on the surface and the edges are set.
  7. Flip each pancake with a spatula and cook for an additional 1-2 minutes or until the center springs back when touched lightly.
