Mini NYC Easter Cookies

These Mini NYC Easter Cookies are thick, gooey and packed with chocolate chips and M&M Speckled Eggs! A must-bake for Easter, they’re crispy outside, chewy inside, and best of all—no chilling required!

Ingredients

  • 100g (½ cup) brown sugar
  • 60g (¼ cup) caster sugar
  • 100g unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 300g (2 cups) plain flour
  • 1½ teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • Pinch of salt
  • 100g (½ cup) chocolate chips
  • 130g bag M&M speckled eggs, roughly crushed
  • 50g milk chocolate melts, melted
  • Extra M&M speckled eggs for decoration

Instructions

  1. Preheat the oven to 160ºC and line 2 baking trays with baking paper
  2. In a large mixing bowl, mix together the brown sugar, caster sugar and butter until smooth.
  3. Stir in the egg and vanilla until well combined.
  4. Sift in the plain flour, baking powder, bicarbonate of soda, and salt, then fold into the wet ingredients.
  5. Stir through the chocolate chips and speckled eggs.
  6. Scoop 1-tablespoon-sized dough balls onto the baking trays, spacing them apart. Lightly press down on the tops.
  7. Bake for 10-12 minutes or until lightly golden. Allow to cool on the tray.
  8. Spoon a small blob of melted chocolate onto each cookie and press 2-3 speckled eggs into the centre.
  9. Place the tray in the fridge to set the chocolate.
