Ingredients

  • 4 cups Rice Bubbles
  • 1 pack mini M&Ms
  • 75g unsalted butter, cubed
  • 250g white marshmallows (Pascal or similar)
  • 1 teaspoon vanilla extract
  • Sprinkles (optional)

Instructions

  1. Line a slice tray with baking paper, leaving an overhang for easy removal.
  2. In a medium saucepan over low heat, melt the butter and marshmallows, stirring continuously until smooth. Stir in vanilla.
  3. Allow the marshmallow mixture to cool slightly (if it’s too hot, it will melt the M&Ms).
  4. In a large mixing bowl, combine Rice Bubbles and M&Ms. Pour the melted marshmallow mixture over the top and quickly stir to coat.
  5. Press the mixture into the prepared tray, smoothing the top with a piece of baking paper.
  6. Sprinkle with extra M&Ms or sprinkles if desired.
  7. Refrigerate for at least 2 hours, or until firm.
  8. Slice into bars and enjoy!

Notes

Tip: For the cleanest slices, use a sharp knife and wipe it clean between cuts.
