Marshmallow Bubble Slice (LCM)

Ingredients
- 4 cups Rice Bubbles
- 1 pack mini M&Ms
- 75g unsalted butter, cubed
- 250g white marshmallows (Pascal or similar)
- 1 teaspoon vanilla extract
- Sprinkles (optional)
Instructions
- Line a slice tray with baking paper, leaving an overhang for easy removal.
- In a medium saucepan over low heat, melt the butter and marshmallows, stirring continuously until smooth. Stir in vanilla.
- Allow the marshmallow mixture to cool slightly (if it’s too hot, it will melt the M&Ms).
- In a large mixing bowl, combine Rice Bubbles and M&Ms. Pour the melted marshmallow mixture over the top and quickly stir to coat.
- Press the mixture into the prepared tray, smoothing the top with a piece of baking paper.
- Sprinkle with extra M&Ms or sprinkles if desired.
- Refrigerate for at least 2 hours, or until firm.
