Mini Chocolate Pudding Truffles

Transform your tastebuds one truffle pudding at a time. Indulge in these deliciously fudgy no bake Christmas treats. Made from store bought mud cake, drizzled with melted white chocolate and decorated with red and green M&M's. These bite-sized wonders are a festive delight. Ingredients

  • 1 Coles or Woolworths chocolate mud cake OR 6 double chocolate muffins
  • 100g Dark chocolate melts
  • 30g Unsalted butter
  • 1-2 tablespoons Liqueur - Baileys, Frangelico, Kahlua, Rum, Brandy, Sherry (optional)
  • 200g White chocolate melts
  • Red and Green M&Ms

Instructions

  1. Crumb the cake/muffins with your hands and place in a large bowl.
  2. Melt the chocolate and butter together in a small microwave safe bowl for 30 seconds on medium heat, stir. Then repeat as needed.
  3. Pour the melted chocolate mixture into the cake crumbs and stir to combine. If using liqueur, add in this step with the melted chocolate.
  4. Roll heaped tablespoon sized balls and place on a lined baking tray. When the tray is full, place in the fridge for 1 hour. .
  5. Melt the white chocolate as per the melting chocolate instructions in step 2 above.
  6. Spoon ½ teaspoon of chocolate on top of the chocolate cake truffles. Carefully lay 1 red and 2 green M&Ms on top in the shape of holly. Continue with each chocolate cake truffle until all are covered.
  7. Place the tray back in the fridge for about 30-60 minutes to set.
