Easter Brownie

This homemade fudgy brownie recipe is hands down the best I’ve ever made, and I know it’ll become your go-to as well! Made with simple pantry staples, these brownies have crispy edges, a perfectly fudgy centre, and an irresistible chocolate flavour that will impress everyone.

For an Easter twist, drizzle with white chocolate and decorate with speckled eggs. Everyone who’s tried them loves them - one bite, and you’ll be hooked!  You will see why my girls and I have officially said goodbye to box mixes for good!

Ingredients

  • 150g unsalted butter, softened
  • 180g dark chocolate
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 280g (1 ¼ cup) caster sugar
  • 3 eggs
  • 30g (¼ cup) cocoa powder
  • 120g (¾ cup) plain flour
  • 113g bag Cadbury Caramilk or Dream white chocolate eggs, cut in half
  • 50g white chocolate melts
  • 130g bag M&M speckled eggs

Instructions

  1. Preheat the oven to 160ºC (fan-forced). Line a 17 x 27cm slice pan with baking paper, leaving an overhang for easy removal.
  2. In a microwave-safe bowl, melt the butter and dark chocolate in 30-second intervals, stirring until smooth. Stir in the vanilla and salt.
  3. Whisk in the caster sugar until fully incorporated.
  4. Add the eggs, whisking until the mixture is smooth and glossy.
  5. Sift in the cocoa powder and plain flour. Pour in the Easter eggs and stir until smooth.
  6. Pour the batter into the prepared pan. Bake for 20-25 minutes or until a skewer inserted in the centre comes out with moist crumbs (not wet batter).
  7. Let the brownies cool completely. For the best texture, chill overnight before slicing!

Notes

Easter Tip: Drizzle cooled brownies with melted white chocolate and top with speckled eggs for a festive touch!
