Ingredients
Choc Mint Bites
- 150g dark chocolate/milk chocolate melts
- 10g copha/1 tablespoon coconut oil
- Variety of peppermint chocolate bars chopped into 5mm pieces. I have used Mint Patties, Peppermint Crisp, Mint Aero, Peppermint Kit Kat etc
Instructions
Choc Mint Bites
- Melt the chocolate and copha/coconut oil in a small microwave safe bowl for 1 minute on medium heat, stirring every 30 seconds until melted.
- Using a silicone mini muffin pan, spoon 1 teaspoon of chocolate into each mini muffin cup.
- Tap the muffin pan on the bench 3 times to evenly distribute the chocolate.
- Working quickly, fill each chocolate disk with peppermint chocolate pieces.
- Place in the fridge to set for a few minutes.
- Once the chocolate is set, you will be able to pop the peppermint chocolate discs out easily.
Notes
If you don’t have a mini muffin pan, you can spread the chocolate into a slice tray. Sprinkle the chopped up chocolate pieces over the top and chill in the fridge for 1 hour to set. Using a sharpe knife, cut into serving pieces when it has hardened.
