Nutella Brownie Santa Hats

Ingredients

Nutella Brownie Santa Hats
  • 550g Nutella
  • 3 eggs, room temperature
  • Pinch salt
  • 1 teaspoon vanilla
  • ⅓ cup plain flour
  • Extra Nutella to glue the strawberry to the brownie base
  • Punnet of strawberries
Whipped Cream
  • 300ml thickened cream
  • ¼ cup icing mixture
  • 1 teaspoon vanilla

Instructions

Nutella Brownie Santa Hats
  1. Preheat the oven 160ºC and line a slice tray with baking paper.
  2. Wash the strawberries and let them air dry on a clean tea towel. Cut the leaves off so there is a flat bottom for the strawberry to sit on.
  3. Place Nutella in a microwave safe bowl and warm on high for 30 seconds.
  4. Lightly whisk the eggs and add to the Nutella with the salt and vanilla. Gently stir until well combined.
  5. Sift in the flour and gently fold through until all of the flour is incorporated with the wet ingredients.
  6. Pour into a lined slice tray and cook for 20-25 minutes. Allow to cool completely in the tin. I find it helps to refrigerate the brownie before cutting the circles.
Whipped Cream
  1. Whip the cream, icing mixture and vanilla until stiff peaks form.
Assembling the Santa Hats
  1. Cut circles using a 5cm cookie cutter.
  2. Spread a small amount of Nutella on the top of each circle and add the strawberry on top.
  3. Put the whipped cream into a piping bag with a small star shaped nozzle.
  4. Pipe stars around the base of the strawberry and 1 star on the top of the strawberry to complete the Santa hat.

Notes

If you don’t have a piping bag, use a snap lock bag instead.  Or spoon a blob of whipped cream on top of the Nutella circle and rest the strawberry on top (this will replace the piped stars) don’t forget a small blob of cream on top as well.
