Ingredients
- 3 eggs
- 300ml milk
- 300ml water
- 1 dessertspoon oil (vegetable/coconut/avocado) Do not use olive oil
- 2 ¼ cups plain flour
- Nutella, berries and yoghurt (to serve)
Instructions
- In a large 2L jug or mixing bowl whisk the eggs, milk, water and oil together.
- Slowly sift in the flour ½ cup at a time and whisk each time. When all the flour is sifted in, give one last whisk to ensure the mixture is smooth.
- Lightly grease your crepe pan and heat over low heat (or just above low, but not medium)
- Pour some batter in your pan and swirl to coat the base of the pan (my pan uses the dunk method)
- Cook until the edges are golden and you can see the batter on the top of the crepe has set. Flip out onto a clean serving plate.
- Continue until all crepe mixture has been used up.
To Serve
- Spread 1 crepe with Nutella, top with sliced strawberries, blueberries and raspberries at one end. Roll up from the berry end and place on your plate seam side down. Continue with each crepe until you have a desired amount (2-3 crepes is a good amount)
- Put a heaped dessert spoon of Nutella in a small dish and heat in the microwave for 20 seconds. Give it a little stir and drizzle over the top of the crepes.
- Serve with a dollop of yoghurt (you could substitute for whipped cream or ice cream) and fresh berries on the side.
- Enjoy
