Ingredients

  • 250ml coconut milk (you can also use almond, oat, soy, cashew etc)
  • ¼ cup chia seeds
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • Homemade granola
  • Diced fruits of choice

Instructions

  1. In a measuring jug pour 1 cup/250ml coconut milk. Add chia seeds, maple syrup, vanilla and cinnamon. Stir well with a fork or mini whisk.
  2. Pour into serving glasses or glass jars.
  3. Place in the fridge to set overnight.

Notes

Optional:

About an hour after you place them in the fridge, give the chia pudding a quick stir to ensure the chia seeds don’t settle in a clump at the bottom.


Entertainers tip:

If entertaining for brunch (eg Christmas or Easter), pour into small serving glasses or jars and set in the fridge overnight.  In the morning, have bowls of fruit salad & granola ready for guests to add on top of their chia pudding. 


To freeze:

Follow instructions above, then pour into a bowl or container to set.  The next day, spoon into a snap lock bag and flatten out.  Place in the freezer.  When frozen, snap into pieces like you do with chocolate bark and add to smoothies!
