Ingredients

  • 6 x 52g Cherry Ripe bars
  • 1 x 250g Arnott’s Marie or Arrowroot biscuits
  • 2 tablespoons cocoa powder
  • 1 tin sweetened condensed milk
  • ½ cup desiccated coconut
  • Red or pink food colouring

Instructions

  1. Chop 3 Cherry Ripe bars into 1 cm pieces and set aside.
  2. In a food processor, blitz the biscuits until they form fine crumbs. Add the cocoa powder and pulse a few times to combine.
  3. Cut the remaining Cherry Ripe bars into quarters and add them to the food processor. Blitz until they are in small pieces, then pour the crumbs into a large bowl.
  4. Add the condensed milk and the Cherry Ripe pieces from step 1 to the bowl. Stir with a large spoon until well combined.
  5. In a snap-lock bag, add the coconut along with a few drops of food coloring. Shake and rub the food coloring into the coconut until evenly combined, then pour it into a small bowl.
  6. Using heaped teaspoons, roll the Cherry Ripe mixture into balls, then coat them in the colored coconut.
  7. Place the balls on a tray and refrigerate until chilled.

Notes

If you don't have a food processor, place the biscuits into a large snap lock bag and crush with a rolling pin
