Red Velvet Crinkle Cookies

These festive fun cookies are definitely Santa approved!! A new favourite cookie to add to your festive baking list. You will love their light and fudgy centre, which makes them a nice change to your usual Christmas treats. Santa will love these with a nice glass of chilled milk on Christmas Eve.

Ingredients

  • 65g unsalted butter, softened
  • ¼ cup caster sugar
  • ¼ cup brown sugar
  • 1 teaspoon vanilla
  • 1 egg, room temperature
  • Red food colouring
  • ½ cup Self Raising Flour
  • ½ cup Plain Flour
  • ¼ cup cocoa powder
  • Pinch salt
  • ½ - 1 cup icing sugar, sifted

Instructions

  1. Using electric beaters or a stand mixer, beat the butter, caster sugar and brown sugar together until light and fluffy.
  2. Add the vanilla and eggs and beat on low speed until combined. Add the red food colouring. Start with 1 teaspoon and continue adding 1 teaspoon until you are happy with the colour.
  3. Sift the flours and cocoa together into the bowl and using low speed, mix until just combined. Scrape down the sides as needed. The dough will be very soft. Place the bowl in the fridge for 1 hour.
  4. Preheat the oven to 160ºC and line 2 baking trays with baking paper.
  5. Pour the sifted icing sugar into a small bowl and roll tablespoons of mixture into balls. Roll the balls into the icing sugar and coat twice. Place on the prepared trays.
  6. Bake for 8-10 minutes or until the tops are cracked and just firm to touch. Set aside on the trays to cool completely.

Notes

**If you are using a food colouring gel, add 1 drop at a time until you are happy with your colour.**
