Hickory Pulled Pork Burgers

Ingredients
Pulled Pork
- 1.5kg slow cook scotch roast, or boneless pork shoulder (rind removed)
- 1 x 425ml bottle 'Sweet Baby Ray's' Barbecue sauce or Hickory & Brown Sugar BBQ Sauce
- 1 tablespoon cornflour
- 2 tablespoons water
To Serve
- Bread rolls
- Butter
- Coleslaw or fresh salads
- Grated cheese
- Mayonnaise
Instructions
- Cut the meat into 4 large chunks and place in the slow cooker.
- Pour the sauce over the top. You can turn the meat around in the sauce if you wish.
- Turn the slow cooker on low 8-10 hours or high 4-6 hours.
- When the meat has finished cooking, place it on a clean chopping board and using two forks, shred the meat and place into a large bowl.
- Strain the sauce into a small saucepan and heat on medium until boiling.
- The sauce will be a little runny, so thicken with a cornflour slurry. Stir the cornflour and water together in a small dish and pour into the sauce. Gentle stir until the sauce thickens.
- Using a ladle, spoon the sauce over the meat. Stir thoroughly after each spoonful to ensure you don’t make the meat too soggy. You want your meat to have some of the sauce for flavour, but you don’t want it swimming in the sauce. Your meat will be ready to put onto the burgers.
To serve
- Cut the bread rolls in half and spread with butter. Heat a frypan over medium-high heat and toast the bread rolls until golden.
- Spoon some of the sauce over the base of the bread roll.
- Spread mayonnaise over the top part of the bread roll. If you are using a coleslaw, you won't need the extra mayonnaise.
- Spoon pulled pork over the sauce and top with your chosen salads.
