Simple and Easy Pancakes

Are you tired of making the same old boring pancakes shake & bake mix  Or don’t like your pancakes tasting like rubber?  Well, look no further, I have a stack of perfectly soft, fluffy pancakes right here!  Sunday mornings won’t be the same again.  You will definitely impress your loved ones with this simple, quick and easy pancake recipe.

Ingredients

  • ¾ cup milk
  • 1 teaspoon vinegar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup self-raising flour
  • 1 teaspoon bicarbonate of soda
  • Pinch of salt
  • 2 tablespoons caster sugar
  • 50g unsalted butter, melted
  • Extra butter for greasing the pa

Instructions

  1. In a jug, warm the milk in the microwave for 20–30 seconds until lukewarm (not hot). Stir in the vinegar and set aside for a few minutes to curdle slightly.
  2. In a large bowl, sift together the flour and bicarbonate of soda. Stir in the sugar and salt.
  3. Add the egg, vanilla, and melted butter to the milk mixture. Whisk until smooth and well combined.
  4. Pour the wet ingredients into the dry ingredients and gently whisk until just combined—be careful not to overmix!
  5. Heat a frying pan over medium/medium-low heat and lightly grease with butter.
  6. Pour ¼ cup of batter into the pan for each pancake. Cook for 1–2 minutes, or until bubbles form on the surface. Flip and cook for another 1–2 minutes, until golden brown.
  7. Repeat with the remaining batter, greasing the pan as needed.

Notes

  • Serve warm with your favourite toppings—Nutella, jam, honey, maple syrup, ice cream, fresh berries, yoghurt or fruit salad. The choice is yours!
