Pressure Cooker Fried Rice

Friday night fakeaways don’t get any easier than this!  Pressure cooker fried rice is super simple to make.  This easy hassle-free recipe is just like traditional fried rice without the stirring.  Made with the usual fried rice ingredients, everyone will be sure to go back for more.  This recipe makes quite a lot, enough to feed 8 people or plenty of leftovers the next day for lunch.

Pressure Cooker Fried Rice

Friday night fakeaways don’t get any easier than this! Pressure cooker fried rice is so simple to make. This easy hassle-free recipe is just like traditional fried rice without all the stirring. Made with the usual fried rice ingredients, everyone will be sure to go back for more. This recipe makes quite a lot, enough to feed 8 people or plenty of leftovers the next day for lunch.

Ingredients

Rice
  • 1 onion, diced
  • 6 bacon rashers, diced
  • 5 garlic cloves, crushed
  • 2 carrots, diced
  • 500ml chicken stock/bone broth
  • 2 cups washed basmati rice
Sauce
  • 2 tablespoons light soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
Add-ons
  • 6 eggs, whisked with a few drops of sesame oil (optional)
  • ½ cup frozen corn
  • ½ cup frozen peas

Instructions

Rice
  1. On the stovetop, heat a frypan on medium-high heat and cook bacon, onion and garlic until the bacon is brown and the onion is translucent.
  2. Add cooked bacon, onion and garlic to the inner pot of the pressure cooker along with carrots, rice, sauce mix and stock. Stir well and ensure the rice is covered.
  3. Lock the lid and make sure the valve is on ‘seal’. Select pressure cook - manual - 10 minutes - start. When time is finished, carefully do a quick release.
  4. While the rice is cooking, cook the egg on the stovetop in a frypan just like you do with scrambled eggs.
  5. When the rice is finished cooking, open the lid and add the frozen vegetables and scrambled egg. Close the lid for 2 minutes or until the vegetables are defrosted and warmed through. Gently stir until everything is well combined and enjoy.

Notes

Rice will be a little sticky at the start, but this will improve on standing.
