Long Jam Doughnuts ( Long John Doughnuts)

Ingredients

  • 1 packet of 6 brioche hot dog rolls
  • 3oo ml thickened cream
  • ¼ cup icing mixture
  • 1 teaspoon vanilla
  • Raspberry jam (see notes)
  • Extra icing mixture to dust

Instructions

  1. Whisk the cream, icing mixture and vanilla in a large bowl until stiff peaks form.
  2. Spoon the whipped cream into a large piping bag (40cm) and snip the end about 1 inch from the end (you will want your piping circle to be about 1cm in diameter).
  3. Pour ¼ cup of jam into a small piping bag (30cm) and snip a small amount of the end off.
  4. Brioche buns should be precut. If so, open up the buns and pipe a line of jam at the bottom of each bun, followed by a line of cream and finish off with a line of jam on the top. Dust lightly with icing mixture.

Notes

  • I purchase my 'Baker's Raspberry Jam' from Spotlight. This jam is the closest jam to the jam they use at the doughnut shops.
  • If you can't find this jam, you can use your favourite raspberry or strawberry jam
  • These doughnuts are best served straight away.
