Ingredients

Lemon Weet-Bix Slice
  • 4 Weet-Bix, crushed
  • 1 cup self-raising flour
  • 1 cup coconut
  • Zest of 1 lemon
  • ½ cup caster sugar
  • 250g butter, melted
  • 1 teaspoon vanilla
Lemon Icing
  • 3 cups icing mixture
  • Juice ½ lemon
  • 30g unsalted butter, softenend
  • 2-3 tablespoons milk
  • 2 tablespoons desiccated coconut
  • Rind of 1 lemon

Instructions

Lemon Weet-Bix Slice
  1. Preheat the oven 160’C. Line a slice tray with baking paper.
  2. Measure all the dry ingredients including the lemon zest into a bowl and stir.
  3. Add melted butter and vanilla to the dry ingredients and stir until all ingredients are well combined.
  4. Pour the mixture into the lined slice tray and spread out. Flatten with the back of a spoon or the base of a glass to ensure the slice has a smooth top.
  5. Bake in the oven for 20-30 minutes. Prepare the icing while the slice is baking.
Lemon Icing
  1. Sift icing mixture into a large bowl.
  2. Add butter and lemon juice and stir.
  3. Slowly add milk, 1 tablespoon at a time, and stir until desired thickness is achieved. Your icing should have a thick smooth consistency without being runny.
  4. Spread over the cooled slice.
  5. In a small bowl, mix together the coconut and lemon rind. Sprinkle over the icing and allow to set.
  6. Use a sharp knife to cut the slice into serving pieces. I find chilling the slice in the fridge helps.
