Clinkers Rocky Road
Ingredients
- 2 x 290g bag Nestle Milk Chocolate Melts
- 50g copha (or coconut oil)
- 1 x 160g bag Allen’s Jaffas
- 1 x 160g bag Cadbury Pascall Clinkers
- 1 x 280g bag Pascall Marshmallows
- 1 x 190g bag Allen’s Ripe Raspberries lollies
Instructions
- Line a lamington pan (24cm x 33cm) with baking paper and set it aside.
- On a clean chopping board, use a sharp knife to cut the Clinkers in half and place them into a large mixing bowl. Using kitchen scissors, cut the marshmallows and raspberry lollies in half. Add them to the bowl with the Clinkers, along with the Jaffas. Mix gently and set aside.
- Place the milk chocolate melts and copha into a medium microwave-safe bowl. Melt on medium heat for 2 minutes, stirring every 30 seconds, until smooth.
- Pour the melted chocolate over the lollies and stir until all the ingredients are evenly coated. Transfer the mixture into the prepared pan, spreading it evenly.
- Allow the Rocky Road to set at room temperature, or refrigerate for approximately 30 minutes for quicker results.
- Once set, use a sharp knife to cut into squares or slices.
