Chocolate Fondant Puddings

They might sound fancy, but trust me - they’re surprisingly simple to make. Whether it’s a midweek treat or a special Valentine’s surprise, this recipe is guaranteed to impress. Serve warm with a scoop of ice cream for pure chocolate bliss!

Chocolate Fondant Puddings
Ingredients
- 160g dark chocolate melts
- 125g unsalted butter, softened
- 1 teaspoon vanilla
- 2 eggs, room temperature
- ⅓ cup (85g) caster sugar
- 1 teaspoon vanilla
- ½ cup (85g) Self Raising Flour
- Pinch salt
Instructions
- Put the chocolate and butter into a small glass bowl and place in the microwave. Melt on medium heat for 1 minute. Stir together. (If you find you need any extra time, add on 10 second increments on medium heat. I find in my microwave, I only need 1 minute).
- Stir the vanilla into the chocolate mixture and set aside to cool whilst you continue with the next step.
- In a large mixing bowl place the eggs and the caster sugar. Using a stand mixer or electric beaters, mix on high speed until the mixture is pale in colour, thick and fluffy.
- Pour the chocolate into the egg mixture and gently fold through (you want to keep the mixture light and fluffy)
- Sift the flour into the mixture and add the salt. Gently fold though to combine. Be sure to scrape down the sides and base of the bowl whilst you are stirring to ensure all ingredients are mixed together. Again you want to keep the mixture light and airy, so be gentle when folding the mixture through.
- Grease 4 x 1 cup ramekins with butter and pour ⅔ cup of mixture into the ramekin.
- If cooking in the air fryer you will need to preheat the air fryer for 3 minutes in step 5. Cook in the airfryer 190ºC for 8 minutes.
- If you are cooking in the oven, preheat the oven in step 1 and cook 160ºC for 12-14 minutes.
Notes
❤️ Each oven and air fryer are different, some can be hotter than others. These times and temperatures are a guide.
❤️Once the puddings are cooked, remove from the air fryer/oven and allow to cool on the bench for 5 minutes. Then invert onto a plate and serve with ice cream, strawberries and a dusting of icing sugar.
