Ingredients
- 250g tasty cheddar cheese, grated
- 250g Philadelphia cream cheese, softened
- Salt & pepper, to taste
- 1/2 teaspoon paprika
- 1 tablespoon Worcestershire sauce
- 1 teaspoon crushed garlic
- 1 shallot/green onion, finely chopped
- 1 jar gherkin relish
- 4 slices of shaved ham, finely chopped
- 1 teaspoon curry powder
- 1 teaspoon paprika (not smoked)
Instructions
- In a large bowl, combine the grated cheddar cheese, cream cheese, paprika, Worcestershire sauce, crushed garlic, chopped shallot/green onions, gherkin relish and chopped ham. Using your hands or a spatula, mix thoroughly until all ingredients are well combined and smooth.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavours to develop.
- Once chilled, divide the mixture into two balls or four logs, depending on your preference.
- On a plate, combine the curry powder and paprika. Mix well.
- Roll each cheese ball or log in the spice mixture, using your fingers to gently pat and press the coating for even distribution.
- If you’re serving right away, arrange the cheese ball on a platter and pair it with crackers, breadsticks or veggies.
Notes
To freeze, stop after Step 3 and wrap the cheese ball or log tightly in plastic wrap followed by aluminum foil. This keeps it fresh for up to two months!
