Air Fryer Pavlova
Ingredients
- 4 egg whites
- 1 cup caster sugar
- 1 teaspoon cornflour
- 1 teaspoon vinegar
- 1 teaspoon vanilla
- 300ml thickened cream
- ¼ cup icing mixture
- 1 teaspoon vanilla
- Fruit of choice for decoration - e.g. strawberries, raspberries, blueberries, passionfruit, mango
Instructions
- In a clean, dry bowl, whisk the egg whites on medium speed until soft peaks form.
- Gradually add the caster sugar, one tablespoon at a time, whisking well after each addition. To check if the sugar is fully dissolved, rub a small amount of the mixture between your fingers - it should feel smooth and free of grains.
- Gently fold in the cornflour, vinegar and vanilla extract until just combined.
- Preheat the air fryer to 150°C for 5 minutes.
- Grease and line the base and sides of a 19 x 6.5cm springform pan with baking paper.
- Reduce the air fryer temperature to 110°C.
- Carefully spoon the meringue mixture into the prepared pan and gently smooth the top gently.
- Place the pan in the air fryer and cook for 40 minutes.
- Once cooking is complete, open the air fryer drawer slightly (about 0.5–1cm) and allow the pavlova to cool completely in the air fryer.
- Once cooled, carefully remove the pavlova from the pan and transfer it to a serving plate.
- In a chilled mixing bowl, combine the thickened cream, icing sugar, and vanilla. Beat on high speed until stiff peaks form.
- Spread the whipped cream over the pavlova.
- Decorate with your choice of fresh fruits - berries, kiwifruit, passionfruit, or mango work beautifully.
- Serve immediately and enjoy!
