Why heat up the oven when you can make a beautiful pavlova in your air fryer? With just 5 ingredients and under an hour of cooking time, this dessert has everything you love about the classic: a crisp golden shell, a soft marshmallow centre and a topping of whipped cream and fresh fruit.

Ingredients

Air Fryer Pavlova
  • 4 egg whites
  • 1 cup caster sugar
  • 1 teaspoon cornflour
  • 1 teaspoon vinegar
  • 1 teaspoon vanilla
Cream:
  • 300ml thickened cream
  • ¼ cup icing mixture
  • 1 teaspoon vanilla
  • Fruit of choice for decoration - e.g. strawberries, raspberries, blueberries, passionfruit, mango

Instructions

Pavlova
  1. In a clean, dry bowl, whisk the egg whites on medium speed until soft peaks form.
  2. Gradually add the caster sugar, one tablespoon at a time, whisking well after each addition. To check if the sugar is fully dissolved, rub a small amount of the mixture between your fingers - it should feel smooth and free of grains.
  3. Gently fold in the cornflour, vinegar and vanilla extract until just combined.
  4. Preheat the air fryer to 150°C for 5 minutes.
  5. Grease and line the base and sides of a 19 x 6.5cm springform pan with baking paper.
  6. Reduce the air fryer temperature to 110°C.
  7. Carefully spoon the meringue mixture into the prepared pan and gently smooth the top gently.
  8. Place the pan in the air fryer and cook for 40 minutes.
  9. Once cooking is complete, open the air fryer drawer slightly (about 0.5–1cm) and allow the pavlova to cool completely in the air fryer.
  10. Once cooled, carefully remove the pavlova from the pan and transfer it to a serving plate.
Whipped Cream
  1. In a chilled mixing bowl, combine the thickened cream, icing sugar, and vanilla. Beat on high speed until stiff peaks form.
  2. Spread the whipped cream over the pavlova.
  3. Decorate with your choice of fresh fruits - berries, kiwifruit, passionfruit, or mango work beautifully.
  4. Serve immediately and enjoy!

Notes

Feel free to decorate with any fresh fruit that is in season or with chocolate shavings.
