Mini Muffin Pancake Bites

Mini Muffin Pancake Bites

These mini pancake bites are perfect for the kids and so easy to make. Serve them for breakfast, pop them in the lunchbox, save them for an after school treat or a delicious dessert.

Ingredients

  • ⅔ cup milk
  • 1 teaspoon vinegar
  • 30g unsalted butter, melted
  • 1 cup SR Flour
  • ½ teaspoon bicarb soda
  • 2 tablespoons caster sugar
  • Pinch Salt
  • 1 teaspoon vanilla
  • 1 egg

Instructions

  1. Preheat the oven 160ºC. Lightly grease a 24 hole mini muffin pan.
  2. In a small jug measure out milk, add vinegar and let sit on the bench whilst you prepare the rest of the ingredients.
  3. In a medium sized bowl, sift flour and bicarb soda. Add sugar and salt. Whisk to combine.
  4. Add vanilla and egg to the milk. Whisk together.
  5. Add wet ingredients to dry ingredients and whisk until all just combined. Be careful not to over mix.
  6. Using a teaspoon, spoon batter into each muffin hole. Top with your favourite topping.
  7. Place the tray in the oven for 10-12 minutes.

Notes

🥣 You can add anything to the top.  Options are:  leave plain, raspberries, blueberries, banana, chocolate chips, frozen berries, 100’s and 1000’s, nutella, jam, the options are endless.


🥣 If serving at home, you could serve warm with a scoop of ice cream if you want to make it a special treat after school or on the weekend 🥰


🥣 If you want to make regular muffin sized muffin pancakes, follow the instructions above and cook for 15 minutes.
