I’m usually not a big fan of brownies, often finding them too rich and sweet. However, these microwave brownies surprised me – they strike the perfect balance of flavours and are wonderfully soft. While moderation is key, you’ll be tempted to go back for more!

With just a few ingredients and minimal prep time, this quick dessert recipe is a must-try for anyone short on time.

Microwave Chocolate Brownie

These 5 minute microwave chocolate brownies are simply delicious! They're a great quick fix for sugar cravings and perfect for easy, delicious desserts. Ideal for sleepovers or a sweet treat anytime.

Ingredients

  • 125g unsalted butter, room temperature
  • 150g choc melts (milk or dark)
  • 2 eggs, room temperature
  • 140g caster sugar
  • 1 teaspoon vanilla
  • 80g plain flour
  • 30g cocoa
  • 80g white chocolate chips (can substitute for chopped walnuts)

Instructions

  1. Line a 20cm square pyrex dish with baking paper.
  2. Place butter and chocolate into a small microwave safe bowl and cook for 1 minute on medium heat (50%) stir, then continue for another 30 seconds if needed. Gently stir together and set aside to cool whilst you continue with the next step.
  3. In a medium sized bowl, whisk the eggs, sugar and vanilla.
  4. Add the melted chocolate & butter and whisk until well combined.
  5. Sift in the flour and cocoa. Add the chocolate chips and gently stir using a large spoon or spatula until all the dry ingredients are incorporated into the wet ingredients. Be careful not to overmix.
  6. Pour the brownie mixture into the prepared dish and smooth the top.
  7. Microwave on 70% or medium-high 4-5 minutes. Check the brownie at the 4 minute mark, I find in my microwave I need to add the extra 1 minute.
  8. Allow to cool in the baking dish and serve with sifted icing sugar, a scoop of ice cream and mixed berries. Best served warm.

Notes

  • You might have to adapt the times for your microwave.
  • Each microwave has different heat setttings depending on the wattage.
  • I would check the brownie after 4 minutes. If it is cooked, remove it from the microwave and allow to cool on the bench.
  • You may only need an extra 30-60 minutes of cooking time.
