Cornflake Cookies

If there’s a cookie that brings us right back to our favourite childhood memories, it has to be the old classic Cornflake Cookie.  Perfectly crispy on the outside and deliciously yummy on the inside.  An old classic Australian recipe loaded with crunchy Cornflakes and chocolate chips.   These sweet, crunchy Cornflake Cookies are perfect for the lunch box or afternoon tea treats.  They are so moorish, it’s impossible to stop at one!

Corn Flake Cookies

Corn Flake Cookies

A delicious old fashioned cookie just like the ones Nanna used to make. Crispy on the outside and chewy on the inside. Perfect for lunchboxes or an afternoon tea treat. A nice easy recipe loved by everyone.

Ingredients

  • 250g unsalted butter, softened
  • 1 cup caster sugar
  • 2 teaspoons vanilla
  • 3 eggs
  • 2 ⅓ cups self-raising flour
  • Pinch salt
  • 1 cup chocolate chips (I chose a mix of milk, white and dark chocolate chips)
  • 3 cups cornflakes, lightly crushed
  • 3 cups cornflakes, extra for rolling biscuit dough in

Instructions

  1. Preheat oven 160ºC Fan Forced. Line 2 baking trays with baking paper.
  2. Cream butter and sugar together in a mixing bowl until light and fluffy. This can take up to 3-5 minutes
  3. Add vanilla and eggs, beat on low speed until well combined.
  4. Sift flour and salt onto the butter mixture.
  5. Pour in the crushed cornflakes and chocolate chips. Gently fold through until just combined. You don’t want to overwork the cookie dough.
  6. In a small mixing bowl, pour in extra cornflakes ready for rolling.
  7. Using two teaspoons, drop heaped spoonfuls of cookie batter onto the cornflakes. Gently roll the dough ball over the cornflakes to cover the surface and place on the lined baking trays.
  8. Bake in the oven for 10-12 minutes or until golden.
  9. Allow to cool on the tray and then transfer to the wire rack.

Notes

  • They keep for up to a week in a sealed container.
  • I like to store mine in a sealed container in the fridge for added freshness.
