Apple Sour Cream Slice

Apple Sour Cream Slice

Ingredients
- 340g pack homebrand butter cake mix
- ¾ cup desiccated coconut
- 125g melted butter
- 1 teaspoon vanilla
- 2 apples (you could also use a 400g can pie apples)
- 250g sour cream
- 2 eggs
- 1 tablespoon caster sugar
- 1 teaspoon vanilla
- Cinnamon sugar to dust on top
Instructions
- Preheat the oven 160ºC and line a slice tray with baking paper.
- In a bowl, mix together the cake mix, coconut, melted butter and vanilla.
- Press into your prepared slice tray and smooth over the top. Bake in the oven for 15 minutes
- Peel and core the apples. Cut in half from top to bottom and slice thinly (roughly 0.5cm or less)
- When the slice base has cooked, place the apple pieces over the base. These can be slightly overlapping.
- In a medium sized bowl, whisk together the sour cream, eggs, vanilla and caster sugar until smooth.
- Pour over the apples and gently smooth out with the back of a spoon or spatula.
- Cook in the oven for 15 minutes or until the top has set.
- When cooked, immediately sprinkle cinnamon sugar over the top of the slice. Allow the slice to cool completely. Once cooled, place in the fridge to set, overnight is best.
- Then cut into serving pieces
Notes
- You can use any apples you have at home in this recipe
- You can substitute the apples for a 400g can pie apples if you wish
