Anzac Biscuit Cups

Ingredients

  • 1 cup plain flour
  • 1 cup rolled oats
  • ¾ cup desiccated coconut
  • ¾ cup sugar (I used raw sugar, however you can also use caster, white or brown sugar)
  • 140g unsalted butter
  • 1 tablespoon golden syrup
  • 2 tablespoons boiling water
  • 1 teaspoon bicarbonate of soda

Instructions

  1. Preheat the oven 160ºC and lightly grease a mini muffin pan.
  2. Sift flour into a bowl.
  3. Add rolled oats, coconut and sugar. Stir dry ingredients together.
  4. Melt butter and golden syrup in a small saucepan over low heat.
  5. In a small bowl, mix together bicarb soda and boiling water. Add this to the butter mixture and stir well. The butter mixture will start to foam.
  6. Pour the foaming butter mixture into the dry ingredients and mix well.
  7. Take spoonfuls of biscuit mixture and press into the greased mini muffin pan, until they are level with the top of the pan.
  8. Bake for 12-15 minutes or until golden.
